The Cantabrian Sea anchovies are renowned worldwide for their superior quality. Caught in the cold, deep waters of the Atlantic Ocean, where nutrient-rich currents promote slow and steady growth, these anchovies reach larger sizes compared to common varieties. The result is firm, meaty flesh with an intense flavor, shaped by a unique habitat.
Our Magno anchovies embody the excellence of this tradition: each fillet is cleaned and processed entirely by hand, entrusted to the precision and delicacy of skilled female hands, in keeping with ancient Cantabrian customs. A level of care that ensures a product of rare refinement.
For preservation, we select only 100% Italian extra virgin olive oil, which adds roundness and fragrance, and the prized centrifuged cream butter from the Langhe region of Piedmont, capable of enhancing the anchovy’s flavor without overpowering it. In addition, our anchovies are stored under refrigeration, ensuring a lower level of salinity compared to standard products on the market.
